How to Make Biscuits for One (or Two)

Out of the Oven

For singles and small families it is hard to fix certain homemade items and use them up before the whole batch spoils. Biscuits are one of those. They taste best when fresh, and just aren’t the same after they get cold!

I do not like store-bought biscuits. I was raised on the old-fashioned stuff and that is what I prefer. With it being just me and a little kid, though–we aren’t able to eat a whole batch of them, so I modified a recipe to make “just enough” for one or two.

Ingredients:

  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon sugar
  • 1-1/2 teaspoons of butter
  • 1/2 cup buttermilk or soured milk

Pre-heat oven or toaster oven to 400 degrees Fahrenheit.

I generally make these biscuits when the last of my jug of milk is starting to turn. It may sound nasty, but that soured milk makes the best biscuits, and is what we used as a kid instead of buying buttermilk or adding vinegar to sweet milk.

Step One:

Mix the flour, salt, baking soda and sugar together in a bowl.

Step Two:

Add the butter to the dry ingredients, mixing until it looks crumbly.

Step Three:

Add the buttermilk and stir until just mixed.

Step Four:

Turn out on a floured place and knead lighly for a minute or two.

Step Five:

Pat out the dough until it is 1/2-inch thick, then cut with a biscuit or a cookie cutter. I use a recycled can with both ends removed, or you can also use a drinking glass like my parents did.

Step Six:

Place on an ungreased cookie sheet and place in a hot oven (400 degrees) for 10-12 minutes.

Ready for the Toaster Oven!

Step Seven:

Enjoy your piping hot homemade biscuits!

This recipe makes 3 to 5 biscuits depending upon how thick you pat them out. I use every last piece of the batter, including the little piece that is always left after you finish cutting. That little “baby biscuit” always goes to the youngest in the house–a baby for a baby, as my parents used to say!

This recipe cannot be beat when served with butter and honey, but we love them smothered in sausage gravy too!
