I have been working through the recipes in Meg’s book Minimalist Cooking. Tonight I am working on my second recipe from her book. First I roasted some vegetables (p.27) and currently I have an apple crisp in the oven (p.54).
Honestly, I am surprised I am cooking so much. I normally throw something together quick but rarely fix whole meals like I have lately. What’s better, they actually taste great!
Her recipes are very basic, lending themselves well to creativity. Tonight I used carrots and potatoes, tossed them in a little oil with some salt and pepper, added a little basil for kicks and it was the best part of dinner tonight! My kid, she says she actually loves my cooking “even better” lately, which makes me feel really good.
